Under 15-minutes: Homemade Pepper Lunch

There used to be a Pepper Lunch near my JC, and it was a huge treat for my classmates and me on the rare occasions we went out to eat as a class! The sizzling hot plate and honey brown sauce always hit the spot, and they still do for me today. I love that I can recreate this dish at home and enjoy it anytime. Plus, it’s a bonus that it’s so incredibly quick and easy!

Prep time: Under 5 minutes

Cook time: 10 minutes

Ingredients

  • 250 - 300g salmon, sliced

  • 1 bowl of cooked rice

  • 1 cube of butter

  • Black pepper

  • French beans (I used frozen - link)

  • Sweet corn (This is what I would use, but I only had carrots when I made it)

  • 1.5 tbsp light soy sauce

  • 1 tsp sesame oil

  • 1 big tsp honey

  • 1 tsp garlic powder

  • 1 egg

  • Salt

Notes

  1. You can replace salmon with chicken or beef

  2. Garlic powder should not be replaced with fresh garlic as the flavour profile is different

  3. I don’t think Pepper Lunch uses sesame oil in their recipe, but it somehow works and the small teaspoon enhances the dish and doesn’t come off as a striking tasting note at all

Method

  • Slice salmon and season with lightly with salt and black pepper, set aside

  • Cook frozen vegetables in the microwave, set aside

  • Mix light soy sauce, sesame oil, honey & garlic powder together, set aside

  • Cut cube of butter and prepare portion of rice

  • Heat the pan and add salmon in to sear for about 2 minutes

  • Add rice, butter & “honey brown sauce” and mix well in the pan

  • Crack an egg & add vegetables in

  • Crack a generous amount of black pepper before serving!

Notes

  1. If using fresh vegetables, also cook them ahead and set aside

  2. When adding honey brown sauce, I’d recommend not adding everything if you don’t need to. We use different portions of salmon and rice so pour the sauce with caution and add more later if needed!

  3. The butter I used is salted butter, but unsalted will be fine
