FFF’s Foolproof Roast Chicken Recipe
We’ll take this over any fast food or grocery store chicken!
The best parts of a great roast chicken are the crispy, golden skin and juicy, flavorful meat! This foolproof roast chicken recipe always feels like a treat, no matter how often we make it at home.
It’s an oven-baked recipe, so it requires minimal attention, letting you relax or get other things done while it cooks. For us, it’s the perfect, satisfying meal to enjoy post-workout!

Ingredients
1 kg French-bred chicken, whole
extra virgin olive oil
1.5 tbsp salt
0.5 tbsp bavarian chicken rub (see Notes, points 2 - 4 for substitute)
1 tsp sugar
black pepper
Notes
French-bred chickens are prized for roasting! I feel they usually have more fat under the skin which contributes to flavour and crispiness:)
Bavarian chicken rub is made up of: Sea salt, paprika, mustard seed, rosemary, tomato, garlic, coriander, fennel, chilli & oregano
I’ll highly recommend adding these commonly found seasonings: Paprika, dried rosemary, garlic powder, cayenne pepper & dried oregano
We’ll be careful when adding rosemary, garlic powder and oregano as these seasonings can overpower the flavours of the dish. We prefer to go for a balanced flavour profile rather than have it herb/garlic-forward. But feel free to add your own seasonings!
There are a variety of seasoning blends you can find and use as well, do check if the blend already comes with salt and adjust the amount of salt added in the dry rub
Method
Preheat oven to 150ºC
Dry whole chicken thoroughly with paper towels, both interior & exterior of the bird
Trim off excess fat, chicken legs, head, neck & bottom if needed
Spread just enough olive oil evenly on the skin of the entire chicken
Prepare dry rub and make sure all the dry seasonings are well mixed
Massage seasonings evenly, if you’re using a blend that does not include salt, feel free to sprinkle a bit more salt all over the chicken
Start roasting chicken once the oven has reached temperature
After about 1.5 hours, brush the chicken with more olive oil
After 30 minutes, brush the chicken with olive oil again
After over 2 hours, your chicken should be a beautiful, crisp golden brown!
Notes
Feel free to spread any oil/fat of your preference! We actually used chicken fat from our Chicken Confit recipe
Spread just enough oil, being too generous might result in extra oily skin when serving!
There are no hard and fast rules for when to spread oil on the chicken while it is roasting. We recommend doing it 2 - 3 times, whenever the skin looks a bit translucent and dry. The occasional oil will help the skin become super crispy at the end of the roast!
