Super easy, 3-ingredient Chicken Soup Recipe

This dish will forever be in rotation in our home. It’s what I run towards when I’m too busy with work to go through ingredient prep, or really, one of those meal ideas I use when I have no idea what to cook.

Prep time: 1 minute

Cook time: 20 minutes

Serving: 1 person

Ingredients

  • Extra virgin olive oil

  • 250g chicken breast or thigh, cubed

  • 1.5 tbsp chicken bone broth powder - I used this

  • 300 - 350 ml water

  • Frozen vegetable mix - I used this

  • Salt

  • Black pepper & cayenne pepper (optional)

Notes

  1. Feel free to double or triple the recipe

  2. Use any oil/fat you like, taking note that different oils might result in slightly different flavours

  3. I’ll suggest to cube the meat up to 2 x 2 cm size, especially when using chicken breast which tends to be drier in texture. At this size, it cooks faster as well.

  4. Feel free to swap the chicken bone broth to any bone broth you like, do keep in mind the proportion of water to stock/powder will be different if you’re using your own. I’ll share some alternatives down below!

  5. Highly recommend a frozen vegetable mix meant for soups (like this) for this quick and easy recipe. You can absolutely prepare your own fresh veggies of cubed potatoes, carrots, small amount of white onion, leeks, french beans or anything you like.

  6. Salt may or may not be required, depending on the soup stock you used. Taste before serving.

Method

  • Heat an appropriate sized pot, then add oil in

  • Start to cook the chicken for about 3 minutes

  • Add frozen vegetables and stir fry for about 1 minute

  • Add water and chicken bone broth powder

  • Stir well and let the soup come to a boil

  • Lower the heat to a simmer for 10 - 15 minutes

  • Taste and add salt if needed

  • Serve with black pepper and cayenne pepper if you wish!

Notes

  1. Chicken does not need to be fully cooked for step 2, this will ensure it doesn’t become overcooked or too dry when its ready to be served

  2. If your frozen veggie mix does not contain onions, I’ll recommend to dry the onions in step 2 until translucent and fragrant before adding the chicken in

  3. You can also add light soy sauce or coconut aminos instead of salt, but note that those will change the colour of the soup
