  • 1/2 onion, diced

  • A few sprigs of fresh thyme (or rosemary)

  • A large cube of butter (about 30g)

  • 500ml chicken stock

  • 120ml water

  • 1 tbsp plain flour

  • Cooking cream (as much as you like)

  • Salt and black pepper, to taste

Method

  • Start by slicing the mushrooms and dicing the onion

  • In a large pot, melt the butter over medium heat. Add the diced onion and stir until the onion becomes soft and translucent

  • Add the sliced mushrooms to the pot, stirring occasionally, until the mushrooms are softened and slightly browned. Some moisture is from the mushrooms is going to be released so make sure to cook most of it off before going on to the next step.

  • Add thyme and then sprinkle the flour over the mushroom mixture and stir well to coat everything evenly. This helps thicken the soup as it cooks. Let it cook for about 1 minute to eliminate any raw flour taste.

  • Slowly pour in the chicken stock and water, stirring to combine. Bring the mixture to a gentle boil, then reduce the heat and let it simmer for 10 minutes.

  • Using a hand blender, blend the soup directly in the pot until it reaches the consistency you like. If you don’t have a hand blender, carefully transfer the soup to a countertop (smoothie) blender. Blend in batches if needed.

  • Add cream to the soup and mix well.

  • Taste the soup and adjust the seasoning with salt or more cream. If the soup feels too thick, add a splash of water or stock to reach your desired consistency.
